Tiramisù con uova pastorizzate - Tiramisu with pasteurized eggs

Il tiramisù è un dolce golosissimo, e prevede l'uso di uova crude, quindi lo mangio solo se le uova sono pastorizzate (processo utilizzato per abbattere la carica batterica).
Le uova pastorizzate sono disponibili in commercio, ma nel caso ne foste sprovvisti è possibile  procedere con la pastorizzazione fatta in casa (ricetta  qui).


The tiramisù is a delicious cake, and involves the use of raw eggs, so I eat it only if the eggs are pasteurized (process used to break down the bacterial load).
Pasteurized eggs are available on the market, but if you don't have them you can proceed with homemade pasteurization (recipe here).

Ingredienti (per 6 porzioni):
250 gr. di mascarpone
150 gr. di biscotti savoiardi
3 uova
3 tazzine di caffè lungo  zuccherato con 1 cucchiaio di zucchero
cacao q.b.
135 gr. di zucchero, di cui:
per montare i tuorli - 45 gr. di zucchero 
per lo sciroppo per la pastorizzazione dei bianchi d'uovo - 45 gr. di zucchero e 22,5 di acqua 
per lo sciroppo per la pastorizzazione dei rossi d'uovo - 45 gr. di zucchero e 22,5 di acqua 

Preparazione:
Preparare il caffè ed aggiungere lo zucchero. Lasciare raffreddare.
Sgusciare le uova e dividere gli albumi dai tuorli.In una ciotola capiente (dovrà contenere il composto di albumi, rossi d'uovo e mascarpone), montare con le fruste elettriche i rossi d'uovo con 45 gr. di zucchero (seguendo le istruzioni per la pastorizzazione qui). Mettere i rossi d'uovo in frigorifero finchè non si saranno raffreddati (10-15 minuti). 
In una ciotola, montare con le fruste elettriche gli albumi a neve (seguendo le istruzioni per la pastorizzazione qui). Mettere gli albumi in frigorifero finchè finchè non si saranno raffreddati (10-15 minuti).
Quando i rossi d'uovo si saranno raffreddati, aggiungervi il mascarpone e continuare a montare con le fruste elettriche fino ad ottenere una crema gonfia e spumosa. Aggiungere infine gli albumi delicatamente, mescolando dal basso verso l’alto, con un cucchiaio o una spatola, in modo da non smontare gli albumi.
Disporre uno strato di crema sul fondo delle coppette monodose o della pirofila prescelta.  Inzuppare per pochi istanti i savoiardi nel caffè facendo attenzione a non inzupparli troppo, quindi fare uno strato nella pirofila o coppette.
Disporre uno strato di crema sopra i savoiardi, livellando bene la crema e ricoprire con un altro strato di savoiardi imbevuti nel caffè, sistemandoli in senso opposto al precedente strato ( se nel precedente strato erano disposti orizzontalmente, nel successivo disporli verticalmente).
Fare un altro strato di crema, livellare bene, ed infine spolverizzare con il cacao amaro.
Mettere il tiramisù in frigorifero per qualche ora prima di servirlo.English version

Ingredients (for 6 portions):
250 gr. of mascarpone cheese
150 grams of ladyfingers biscuits
3 eggs
3 cups of long coffee  sweetened  ith 1 tablespoon of sugar
cocoa q.b.
135 grams of sugar, of which:
to whip the egg yolks - 45 gr. of sugar 
for egg whites pasteurization syrup - 45 g sugar and 22,5 g water 
for egg yolks pasteurisation syrup - 45 g sugar and 22,5 g water 

Preparation:
Prepare the coffee and add the sugar. Let it cool.
Shell the eggs and divide the egg whites from the yolks.
In a large bowl (it should contain the mixture of egg whites, egg yolks and mascarpone), whip with electric whisks the egg yolks with 45 gr. of sugar (following the instructions for pasteurization here). Put the egg yolks in the refrigerator until they have cooled down (10-15 minutes). 
In a bowl, whisk the egg whites to stiff peaks (following the pasteurization instructions here). Put the egg whites in the refrigerator until they have cooled down (10-15 minutes).
When the egg yolks have cooled, add the mascarpone and continue to whip with electric whisks until you get a creamy and fluffy cream. Finally add the egg whites gently, stirring from bottom to top, with a spoon or spatula, in order not to disassemble the egg whites.
Place a layer of cream on the bottom of the single-dose cups or the chosen dish.  Soak the ladyfingers in the coffee for a few moments, being careful not to soak them too much, then make a layer in the oven dish or cups.
Place a layer of cream on top of the ladyfingers, leveling the cream well and cover with another layer of ladyfingers soaked in coffee, placing them in the opposite direction to the previous layer (if in the previous layer they were placed horizontally, in the next place them vertically).
Make another layer of cream, level well, and finally sprinkle with bitter cocoa.
Put the tiramisu in the refrigerator for a few hours before serving.
