Zucchero invertito - Invert sugar (Invert syrup)



Lo zucchero invertito è uno sciroppo formato da parti uguali di glucosio e di fruttosio e viene prodotto sciogliendo il saccarosio (il normale zucchero da tavola bianco) in una soluzione acida (il semplice succo di limone).
Perchè usare lo zucchero invertito?
Rispetto allo zucchero tradizionale ha maggior potere dolcificante (
bastano 77 gr di zucchero invertito per 100 gr di zucchero semolato, ma nelle preparazioni è meglio non sostituire completamente lo zucchero - il 50% è un buon compromesso), e favorisce la realizzazione di glasse e decorazioni più lisce. 
Data la sua forma liquida permette di ottenere un impasto che manterrà l'umidità anche una volta cotto e si conserverà più a lungo anche dopo l'esposizione all'aria del dolce finito. Lo zucchero invertito evita  infine di  cristallizzare nella preparazione di semifreddi e gelati e naturalmente anche dolci da credenza.

Invert sugar (or invert syrup)  is a syrup consisting of equal parts of glucose and fructose and is produced by dissolving sucrose (the common granulated sugar) in an acidic solution (simply lemon juice).
Why should you use invert sugar?
Compared to traditional sugar it has greater sweetening power (77 grams of invert sugar give the same sweetener power of 100 grams of granulated sugar, but in preparations it is better not to replace the sugar completely - 20%-30%  of invert sugar instead of granulated sugar  is a good compromise) and it promotes the creation of better frosting and smoother decorations.
Given its liquid form it allows to obtain a dough that will keep the moisture even when cooked and will keep it longer even after exposure to the air, once baked. The invert sugar finally avoids to crystallize in the preparation of sorbets and ice-cream and of course also cakes.
